Mini Meat pies

For dinner tonight I made mini meat pies, I used the cresent roll recipie and the mexican meat mix and added some mixed veggies, then I wrapped it all up and baked it until golden brown.  The oven was preheated to 350, and I cooked them for about 30 mins.  My

When my husband first started using WordPress, he found out that there what is called a WordCamp, they are held all over the US and in other countries.  Last year he attended WordCamp Birmingham, I posted about this in a previous post, on the way home we talked about how cool it would be to make a WordPress coin.  We then found out there was going to be a WordCamp Atlanta, so we quickly contacted the planners, to find out how many would be coming so we could bring enough to pass around.   WordCamp Atlanta was also where we made a coin that was spesific to them, and we were a in like kind sponsor, I then mentioned to my husband that I would like to send out to other WordCamps the WordPress coins.  It so happened that several of the attendee’s had mentioned the WordPress coins to several people from Automatic, I was able to get a hold of the lady in charge of like kind sponsorships and she was nice enough to post a picture to the organizers blog that WordCamp has.   We had several very nice comment,s on our coins that we handed out at WordCamp Atlanta, I started looking for WordCamps that were coming up and contacting the planners, to offer the coins.

WordCamp Miami, is the first of three WordCamps that we are sending out coins to, WordCamp Miami was held Feb 20th, 2010 and they had a great turn out this year.   They were expecting around 200 people to attend, so I made sure that I sent them enough for any last minute attendee’s.  I can’t wait to hear back on how and if people liked them.

WordCamp Fayetteville in Arkansas, is being held at the end of May and we will be sending coins to them. Not sure how many yet, as it get’s closer they are going to give us a number.

WordCampSF is a one day WordCamp, being held on May 1st.  They are expecting 1,000 people to come, I am still waiting to hear back on how many they would like us to send.

Not everything is fun and games

So for the most part, I am sure I portray my life on a mini farm as fun and that nothing EVER goes wrong.   Well! this post is all about things that go wrong and or that I think are wrong. It might end up looking more like a complaint post.

We don’t have a truck at all, we have my husband’s Ford Explorer that totally needs to have a tune up and heavens knows what else, my Dodge Grand Caravan that we bought when I found out I was pregnant with my youngest, it needs a new blower for the heater and IF any DOOR’S, LIGHT’S and anything else get’s left on causes my car to not start.  It get’s really old when you are in line at school, and you have to push your car, out of the way so that your not holding up the pick-up line.   It get’s old when you have to jump the car, just to get your kids to school, it also get’s really old when you replace parts(alternator) after parts(Tansmission) and your still have issues.  We have had the car for 5 years, and until last year we never had any problems with it, SO (and I am trying really hard) not to complain as I am sure it could be worse.   I needed to get some items and because these items would make a mess in my van, I am going to have to either wrap them in a tarp or see if my brother(who does have a truck) can bring them over on his way to work or from work.   Enough about the cars and the fact I REALLY WANT A TRUCK.

They will not stay in the little pen I made them and because I haven’t been able to finish the fence, I can’t let them roam willy nilly all over the place.  I had them staked, when they were not getting tangled, I was moving them place to place, this worked until they cleared everything there was to clear at the ground level.  We got really cold and I had to buy them some hay, to go with what they were still working on clearing, I didn’t have a hay rack for them so I put it on the ground, they wasted what was left and all they want is the grain(they only get this during the winter)  I spent part of yesterday pulling down any and all green grape vines, brambles and other vines that were still in the trees.  They loved this and PROCCEDDED to get all tangles in the vines, I untangled them and they went back to mucnhing on the vines, there is plenty for them to eat, if they could climb trees.   SPRING cannot come soon enough, as while I have plenty of grass they do not want to eat it or the hay, they want GREEN GRASS.

My chickens are back to being penned, I was letting them out all day and leaving the coop door open so that, they can go back in and lay eggs.  I was trying to clear more of what I hope to make the fence line and stumbled across a nest of 36 eggs.  So they are back to being penned, they keep dumping over their water and making a mess of things.  They are almost as bad as the ducks.  I have 17 chicken’s, 16 of which are hens and I get 5-10 eggs a day, I know they lay at different times and the older they get, sometimes they don’t lay as often.  BUT I WANT MY EGGS!!!! I like to go out and get the eggs and see how many I got.  I want to be able to keep my family with a constant doz and have enough extra to sell to friends if they want them.

We started out with 8 baby ducks, 4 Pekings and 4 Mallards.  We grew all 8 to adult hood, and every person I talked to said, not to pen the ducks just let them loose.  GUESS WHAT????? Where down to 4 ducks and only because they can’t fly, and my kids keep asking when were going to replace the mallards.  They are still around, they just took up residence at the HUGE puddle of water between our house and the neigbours.   I am hoping that I can eventually find a nest or see if they hatch out any eggs and then just try and catch some of the ducklings.  I hear the adult ducks quacking all the time, and I sometimes catch a glimpse as I drive past the water.  My peking female, hasn’t laid any eggs lately so I can’t try and hatch any out.

When my husband and I got married, we adopted a cat sort of by accident and sort of by other means.  We had a family at our church that was moving and couldn’t take the cat with them.  We named her Smudge for a smear of white on her chest, she is WORTHLESS.  She never ended up being a mouser like I had hoped.  We then had several other cat’s and by one means or another they dissaperared.  We then got Siam, who is only SEMI-WORTHLESS.  He will catch a few things, but never the things you want him to catch.  We then got Snowball, she is a great mouser and because she got sick we didn’t spay her.  By the time she was well enough to spay, it ended up that she was pregnant, so she had four kittens.  We were able to find homes for one of the four, but the other three are still here and they think they own the house and should be allowed in.  Only problem with that, is they tend to use the bathroom where ever they happen to be at the time.  Nothing worse than looking on the bed and there is a pile of poo, or finding a wet spot on the rug, when your are walking around with just socks on or barefoot.

The house
We have had the usual things happen, hot water heater needing to be replaced after 10 years( the amount of time we have lived in the house) We are on our SECOND heater, and due to animals or other things, have had to replace the duct work under the house several times.  I have had to patch the duct work several times, including the patch job that I did today. Today’s patch job is very temporary, my dad(THANK GOODNESS FOR DAD) is going to come help me fix it, as it really needs more than a patch job.  We have been through two microwaves, the current one was found at a yard sale, and is not as big as the over the counter one we had.  It get’s the job done and that is what matter’s even if I have to make rice crispies in the oven instead.  We have been through 4 washing machines, and this is is just normal use.  I am not over filling my washing machine, not useing the microwave for things it’s not meant to do, just normal 5 people in the family use.   I have been able to fix the dish washer a time or two, but I have to every month or so, clean out the food trap and that thing is not easy to get to.  I am still on the same dryer that we boought when we had our first kid.


Make a Mix-Chicken Meat Mix/ Chicken Continental and Chicken Burgers

Chicken Mix

11 lbs of chicken (4 medium Fryers), cut up
4 qt. cold water
3 tablespoon parsley flakes
4 carrots, peeled and chopped
4 teaspoons salt
1/2 teaspoon pepper
2 teaspoon basil

Combine all ingredients in a large pot or dutch oven.  Cover and cook over hight heat until water boils, simmer until chicken is tender about 1 1/2 hours. (less time is required if you are using bonless chicken breasts) Remove from heat, strain broth and refrigerate until fat can be skimmed.    Cool chicken, remove and sidcard any bones and skin.  Put chicken into six 1 pint freezer containers, leaving 1.2 inch space, label with contents and date. Pour skimmed chicken broth into six more pint conatiners with 1/2 inch space, mark with date and contents.  Use within 3 months, makes 21 different meals.

Chicken  Continental

1 can of condensed cream of chicken soup
2 tablespoons grated onion
1 teaspoon salt
dash of pepp
3 tablespoons schopped parsley or 1 tablespoon parsley flakes
1/4 teaspoon thyme
2 cups chicken broth
2 cups chicken mix
2 cups instant rice

Preheat oven to 375.  Lightly butter a 2 quart casserole.  In a medium bowl, combine soup, onion, salt, peper, parsley, thyme and chicken broth.  Stir until well-blended, add chicken mix and instant rice.  Put in prepared casserole, cover and bat about 30 mins or until rice is tender.  Makes 6 servings.

Chicken Burgers
2 cups chicken mix
1 cup barbecue sauce
8 hamburger buns

Combine Chicken Mix and barbecue sauce in a medium saucepan.  Cook over medium heat for about 10 mins or until heated through.  Serve over hamburger buns.  Makes 8 servings.

5 lbs Lean Ground Beef, turkey or chicken
1 tsp salt
2 cups chopped celery
2 cups chopped onion
1 cup diced green pepper

Ground meat in a large pot, stirring to keep meat broken up.  Drain excess grease, stir in salt, celery, onions and pepper.  Cover; sommer until vegtables are crisp-tender, about 10 mins.  Remove from heat and let cool.  Ladle into six 2-cup freezer containers, leaving 1/2 inch from top.  Label with date and contents sort in freezer, use withint 3 months.  Makes 6 packages or about 12 cups.  This mix will make 16 different meals, below is just one of the many meals it will make.

Best-Ever minstrone Soup

1(28oz) can tomatoes
2 cups all purpose ground-meat mix thawed
1 quart of water
2 large carrots, peeled and sliced
2(8oz) cans of tomatoe sauce
2 cups beef broth
1 tablespoon dried parsley leaves
1/2 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1/4 teaspoon pepper
1/2 teaspoon garlic salt
1 (15oz) can garbanzo beans drained
1 (16oz) can green beans drained
1 (15oz) can of kidney beans
1 1/4 cup mostaccioli or other macaroni
Parmesan cheese for garnish

Puree tomatoes in blende. in a larg pot combine ground meat mix, pureed tomatoes, water, carrots, tomatoe sauce, broth, parsley, basil, oregano, peper and garlic salt.  Bring to boil, cover and simmer over low heat for about 20 mins.

Add garbanzo beans, grean beans, and kidney beans. Bring to a boil and add macaroni, cook for 10 mins or until macaroni is tender.  Garnish with Parmesan cheese.  This makes 8-10 servings.
